Fluffy Vanilla Sponge Cake

1.Preheat your oven to 180°C (350°F) and grease two 8-inch round cake pans with butter or line them with parchment paper.

2.In a large mixing bowl, whisk together the eggs and granulated sugar until the mixture is pale and fluffy, about 5-7 minutes.

3.Add the melted butter and vanilla extract to the egg mixture, and gently fold until combined.

4.In a separate bowl, sift together the all-purpose flour, baking powder, and salt.

5.Gradually add the dry ingredients to the wet mixture, folding gently with a spatula to avoid deflating the batter.

6.Pour in the milk and continue to fold until the batter is smooth and well combined, being careful not to overmix.

7.Divide the batter evenly between the prepared cake pans and smooth the tops with a spatula.

8.Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

9.Once baked, remove the cakes from the oven and let them cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
