Creamy Chipotle Avocado Pasta with Ground Beef

1.Cook the pasta according to package instructions in a large pot of salted boiling water. Drain and set aside.

2.In a large skillet, heat olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.

3.Add the minced garlic to the skillet and cook for an additional 1-2 minutes until fragrant.

4.Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned and cooked through, about 7-10 minutes. Season with salt and pepper to taste.

5.While the beef is cooking, prepare the creamy avocado sauce. In a blender or food processor, combine the ripe avocados, sour cream, chipotle in adobo sauce, lemon juice, and a pinch of salt. Blend until smooth and creamy.

6.Once the beef is cooked, add the diced tomato to the skillet and stir to combine. Cook for another 2-3 minutes until the tomato is slightly softened.

7.Add the cooked pasta to the skillet with the beef and tomato mixture. Pour the creamy avocado sauce over the pasta and toss everything together until well combined and coated in the sauce.

8.Remove from heat and sprinkle shredded cheese on top. Allow it to melt slightly before serving.
