Garlic Chicken and Potato Skillet

1.Heat olive oil in a large skillet over medium heat.

2.Season the chicken breasts with salt, pepper, paprika, oregano, and cayenne pepper on both sides.

3.Add the seasoned chicken breasts to the skillet and cook for about 5-7 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

4.In the same skillet, add the diced potatoes and cook for about 10 minutes, stirring occasionally, until they start to become tender and golden.

5.Add the sliced red onion and chopped red bell pepper to the skillet with the potatoes. Cook for an additional 5 minutes until the vegetables are softened.

6.Stir in the minced garlic and cook for 1-2 minutes until fragrant.

7.Return the cooked chicken to the skillet and pour in the chicken broth. Bring to a simmer and cover the skillet. Cook for another 5 minutes to allow the flavors to meld and the chicken to heat through.

8.Remove the skillet from heat and sprinkle with fresh cilantro before serving.
