Sweet Sigma Muffins with a Surprise Center

1.Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.

2.In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, and salt until well combined.

3.In another bowl, mix the melted butter, buttermilk, eggs, and vanilla extract until smooth.

4.Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix; a few lumps are okay.

5.In a separate bowl, beat the softened cream cheese, powdered sugar, and vanilla extract together until smooth and creamy. If desired, fold in the chocolate chips for added sweetness.

6.Spoon about 1 tablespoon of muffin batter into each muffin cup, then add about 1 tablespoon of the cream cheese filling on top of the batter. Finally, cover the filling with another tablespoon of muffin batter, ensuring the filling is completely enclosed.

7.Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the muffin comes out clean (the toothpick should not touch the filling).

8.Allow the muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
