Garlic-Infused Pork and Macaroni Skillet

1.In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.

2.Add the minced garlic to the skillet and cook for an additional 1-2 minutes until fragrant, being careful not to burn it.

3.Increase the heat to medium-high and add the pork pieces to the skillet. Season with salt, pepper, thyme, and paprika. Cook until the pork is browned on all sides, about 5-7 minutes.

4.Stir in the diced carrots and potatoes, cooking for another 3-4 minutes until they start to soften.

5.Add the macaroni and chicken broth to the skillet. Bring the mixture to a boil, then reduce the heat to low and cover. Let it simmer for about 10-12 minutes, or until the macaroni is cooked and the liquid is mostly absorbed.

6.Once cooked, remove the skillet from heat and stir in the grated Parmesan cheese if using. Adjust seasoning with salt and pepper as needed.

7.Serve hot, garnished with additional Parmesan cheese if desired.
