Creamy Mexican Beef Casserole

1.Preheat your oven to 350°F (175°C).

2.In a large skillet over medium heat, cook the ground beef until browned, breaking it apart with a spatula as it cooks, about 5-7 minutes. Drain any excess fat.

3.Add the black beans, diced tomatoes with green chilies, corn, chili powder, cumin, garlic powder, onion powder, salt, and black pepper to the skillet. Stir well to combine and let it simmer for about 5 minutes.

4.In a separate bowl, mix the softened cream cheese with half of the Mexican cheese blend until smooth and creamy.

5.Once the beef mixture is ready, remove it from heat and stir in the cream cheese mixture until well combined.

6.In a greased 9x13 inch baking dish, layer half of the crushed tortilla chips on the bottom. Pour the beef and cheese mixture over the chips, spreading it evenly.

7.Top the casserole with the remaining crushed tortilla chips and sprinkle the rest of the Mexican cheese blend on top.

8.Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden brown.

9.Remove from the oven and let it cool for a few minutes before serving. Garnish with fresh cilantro before serving.
