Savory Chicken Egg Yakisoba Stir-Fry

1.Cook the yakisoba noodles according to package instructions, drain, and set aside.

2.In a large skillet or wok, heat the sesame oil over medium-high heat.

3.Add the sliced chicken breast to the skillet and season with salt and pepper. Stir-fry until the chicken is cooked through and lightly browned, about 5-7 minutes.

4.Add the sliced onion, carrot, and bell pepper to the skillet. Stir-fry for another 3-4 minutes until the vegetables are tender-crisp.

5.Push the chicken and vegetables to one side of the skillet. Crack the eggs into the empty side and scramble them until fully cooked, then mix them with the chicken and vegetables.

6.Add the cooked yakisoba noodles to the skillet, followed by the minced garlic, soy sauce, oyster sauce, and mirin. Toss everything together until well combined and heated through, about 2-3 minutes.

7.Remove from heat and garnish with chopped green onions before serving.
