Sweet Red Bean Rajma Delight

1.Drain and rinse the soaked rajma beans. In a large pot, add the rajma beans and cover them with fresh water. Bring to a boil, then reduce the heat and simmer for about 45 minutes to 1 hour, or until the beans are tender. Drain and set aside.

2.In a separate saucepan, melt the ghee or butter over medium heat. Add the cooked rajma beans and sweet red bean paste, stirring to combine.

3.Pour in the coconut milk and add the jaggery or brown sugar, vanilla extract, salt, and ground cinnamon. Stir well to combine all the ingredients.

4.Cook the mixture on low heat for about 10-15 minutes, stirring occasionally, until it thickens slightly and the flavors meld together.

5.Remove from heat and let it cool for a few minutes. Serve warm or chilled, garnished with chopped nuts on top.
