Savory Leek and Beef Zucchini Skillet

1.Heat the olive oil in a large skillet over medium heat.

2.Add the sliced leeks and minced garlic to the skillet, sautéing until the leeks are soft and translucent, about 3-4 minutes.

3.Increase the heat to medium-high and add the ground beef to the skillet. Cook until browned, breaking it apart with a spatula, about 5-7 minutes.

4.Stir in the diced zucchini, dried thyme, smoked paprika, and red pepper flakes. Cook for another 5 minutes, stirring occasionally, until the zucchini is tender.

5.Pour in the beef broth and season with salt and pepper to taste. Stir well to combine and let it simmer for an additional 2-3 minutes to allow the flavors to meld together.

6.Remove from heat and serve hot, garnished with fresh herbs if desired.
