Spicy BBQ Meatloaf with Cheddar Surprise

1.Preheat your oven to 350°F (175°C).

2.In a small bowl, combine the breadcrumbs and milk. Let them soak for about 5 minutes until the breadcrumbs absorb the milk.

3.In a large skillet, heat olive oil over medium heat. Add the diced onion, bell pepper, and celery. Sauté until the vegetables are soft, about 5 minutes. Remove from heat and let cool slightly.

4.In a large mixing bowl, combine the ground beef, ground pork, soaked breadcrumbs, BBQ sauce, ketchup, Worcestershire sauce, hot sauce, smoked paprika, garlic powder, onion powder, cayenne pepper, salt, black pepper, and egg. Mix until well combined.

5.Add the sautéed vegetables and chopped parsley to the meat mixture. Mix until evenly distributed.

6.On a piece of parchment paper, flatten the meat mixture into a rectangle about 1/2 inch thick.

7.Sprinkle the shredded cheddar cheese evenly over the meat mixture, leaving a small border around the edges.

8.Carefully roll the meat mixture into a loaf, starting from one of the shorter sides, using the parchment paper to help guide it. Seal the edges to enclose the cheese.

9.Transfer the meatloaf to a baking dish, seam side down.

10.Brush the top of the meatloaf with additional BBQ sauce for extra flavor.

11.Bake in the preheated oven for 1 hour, or until the internal temperature reaches 160°F (71°C).

12.Let the meatloaf rest for 10 minutes before slicing and serving.
