Cinnamon and Clove Cake

1.Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan or two 9-inch round cake pans.

2.In a large mixing bowl, combine the all-purpose flour, granulated sugar, brown sugar, baking soda, salt, cinnamon, cloves, star anise, coriander, fennel, ginger, and mace. Whisk together until well combined.

3.In another bowl, beat the eggs and then add the vegetable oil, buttermilk, and vanilla extract. Mix until smooth.

4.Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined. Be careful not to overmix; a few lumps are okay.

5.Pour the batter into the prepared baking pan(s) and spread it evenly.

6.Bake in the preheated oven for 30-35 minutes for round pans or 40-45 minutes for a rectangular pan, or until a toothpick inserted into the center comes out clean.

7.Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely before frosting or serving.
