Spicy BBQ Chicken Calzone with Mozzarella

1.Preheat your oven to 425°F (220°C).

2.Season the chicken breasts with salt, pepper, smoked paprika, chili powder, and cayenne pepper.

3.In a skillet over medium heat, add olive oil and cook the chicken breasts until fully cooked, about 6-7 minutes per side. Remove from heat and let cool slightly.

4.Shred the cooked chicken using two forks and mix it with the BBQ sauce in a bowl until well coated.

5.Roll out the pizza dough on a floured surface into a large rectangle, about 1/4 inch thick.

6.Spread the BBQ chicken mixture evenly over one half of the dough, leaving a 1-inch border around the edges.

7.Sprinkle the shredded mozzarella cheese over the chicken, followed by the sliced red onion and chopped cilantro.

8.Fold the other half of the dough over the filling, pressing the edges together to seal. Crimp the edges with a fork to ensure it is tightly sealed.

9.In a small bowl, whisk together the egg and water to create an egg wash. Brush the top of the calzone with the egg wash.

10.Place the calzone on a baking sheet lined with parchment paper.

11.Bake in the preheated oven for 20-25 minutes, or until the calzone is golden brown and the cheese is melted and bubbly.
