Luscious Coconut Mac-n-Cheese Bake

1.Preheat your oven to 350°F (175°C).

2.In a large pot, bring salted water to a boil and cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

3.In a separate saucepan over medium heat, combine the coconut milk, almond milk, nutritional yeast, vegan cream cheese, coconut oil, garlic powder, onion powder, smoked paprika, turmeric, salt, and black pepper. Stir continuously until the mixture is smooth and heated through, about 5-7 minutes.

4.Add the cooked macaroni to the sauce and mix well until the pasta is fully coated with the creamy sauce.

5.Transfer the macaroni and cheese mixture into a greased 9x13 inch baking dish, spreading it evenly.

6.In a small bowl, combine the breadcrumbs with the chopped parsley. Sprinkle this mixture evenly over the macaroni and cheese.

7.Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and crispy.

8.Remove from the oven and let it cool for a few minutes before serving.
