Savory Tomato and Onion Casserole

1.Preheat your oven to 375°F (190°C).

2.In a large mixing bowl, combine the sliced tomatoes, onions, and yellow cucumber. Drizzle with olive oil and season with salt, pepper, oregano, basil, garlic powder, and red pepper flakes. Toss gently to coat the vegetables evenly.

3.In a greased 9x13 inch baking dish, layer half of the tomato, onion, and cucumber mixture evenly across the bottom.

4.Sprinkle half of the mozzarella cheese over the first layer of vegetables, followed by half of the Parmesan cheese.

5.Add the remaining vegetable mixture on top of the cheese layer, spreading it out evenly.

6.Top with the remaining mozzarella and Parmesan cheese, ensuring the vegetables are well covered.

7.Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes.

8.After 30 minutes, remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden brown.

9.Once done, remove from the oven and let it cool for a few minutes before serving.

10.Garnish with fresh chopped basil leaves before serving.
