Sautéed Cauliflower Orecchiette with Golden Breadcrumbs

1.Bring a large pot of salted water to a boil. Add the orecchiette pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

2.In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the breadcrumbs and toast them, stirring frequently, until they are golden brown and crispy, about 3-4 minutes. Remove the breadcrumbs from the skillet and set aside.

3.In the same skillet, add the remaining tablespoon of olive oil. Add the minced garlic and red pepper flakes, sautéing for about 1 minute until fragrant.

4.Add the cauliflower florets to the skillet, season with salt and pepper, and sauté for about 8-10 minutes, or until the cauliflower is tender and slightly caramelized.

5.Once the cauliflower is cooked, add the drained orecchiette to the skillet. Toss everything together, adding reserved pasta water a little at a time to create a light sauce that coats the pasta and cauliflower.

6.Stir in the grated Parmesan cheese and chopped parsley, mixing well to combine all the flavors. Adjust seasoning with more salt and pepper if needed.

7.Serve the pasta hot, topped with the golden toasted breadcrumbs for added crunch.
