Pumpkin Cottage Cheese Delight

1.Preheat your oven to 350°F (175°C).

2.In a large mixing bowl, combine the cottage cheese, pumpkin puree, and softened cream cheese. Mix until smooth and creamy using a hand mixer or a whisk.

3.Add the granulated sugar, eggs, vanilla extract, pumpkin spice, and salt to the mixture. Blend until all ingredients are well incorporated and the mixture is fluffy.

4.Pour the mixture into a greased 9-inch pie dish or a similar baking dish, spreading it evenly.

5.Bake in the preheated oven for 30-35 minutes, or until the edges are set and the center is slightly jiggly but not liquid.

6.Remove from the oven and let it cool at room temperature for about 15 minutes, then refrigerate for at least 2 hours to set completely.

7.Before serving, top with whipped cream and sprinkle with pumpkin seeds for garnish.
