Decadent Coffee Vanilla Cookies

1.Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

2.In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.

3.In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 3-4 minutes.

4.Add the eggs one at a time, mixing well after each addition. Then, stir in the vanilla extract and instant coffee granules until fully combined.

5.Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.

6.If using, fold in the chocolate chips until evenly distributed throughout the dough.

7.Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, leaving about 2 inches of space between each cookie.

8.Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden and the centers are set but still soft.

9.Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
