Cheesy Potato and Egg Bake

1.Preheat your oven to 375°F (190°C).

2.In a large pot, bring salted water to a boil and add the diced potatoes. Cook for about 10-12 minutes until tender but not mushy. Drain and set aside.

3.In a large mixing bowl, whisk together the eggs, milk, flour, baking powder, garlic powder, onion powder, paprika, salt, and pepper until well combined.

4.Add the cooked potatoes to the egg mixture and gently fold in the shredded cheddar cheese, ensuring the potatoes are evenly coated.

5.Grease a 9x13 inch baking dish with melted butter. Pour the potato and egg mixture into the prepared dish, spreading it out evenly.

6.Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.

7.Remove from the oven and let it cool for a few minutes before slicing and serving.
