Königlicher Kabuli Pulao

1.Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes. Drain and set aside.

2.In a large pot, heat the vegetable oil over medium heat. Add the chopped onions and sauté until they are golden brown.

3.Add the minced garlic and sauté for another minute until fragrant.

4.Stir in the lamb chunks and cook until they are browned on all sides.

5.Add the ground cumin, coriander, cardamom, cinnamon, black pepper, and salt. Mix well to coat the lamb with the spices.

6.Pour in 4 cups of water and bring to a boil. Reduce the heat to low, cover, and simmer for about 1.5 hours, or until the lamb is tender.

7.Once the lamb is cooked, remove it from the pot and set aside. Strain the broth and reserve it for later use.

8.In the same pot, add the soaked and drained rice to the strained broth. Bring to a boil, then reduce the heat to low, cover, and cook for about 15-20 minutes, or until the rice is fluffy and cooked through.

9.While the rice is cooking, in a small pan, toast the slivered almonds until golden brown. Set aside.

10.In the same pan, add the julienned carrots and sauté until they are tender. Add the raisins and cook for an additional 2 minutes until they are plump.

11.Once the rice is cooked, gently fluff it with a fork and layer the sautéed carrots, raisins, and toasted almonds on top. Place the reserved lamb on top of the rice.

12.Cover the pot again and let it sit on low heat for another 10 minutes to allow the flavors to meld together.

13.Before serving, garnish with fresh cilantro and pomegranate seeds for a burst of color and flavor.
