Tender Beef Fillet with Herb Crust

1.Preheat your oven to 200°C (400°F).

2.Season the beef fillet generously with salt and pepper on all sides.

4.Spread the herb paste evenly over the entire surface of the beef fillet.

5.In another bowl, combine the breadcrumbs, grated Parmesan cheese, and olive oil. Mix until the breadcrumbs are evenly coated with oil.

6.Press the breadcrumb mixture onto the herb-coated beef fillet, ensuring it adheres well and forms a crust.

7.Heat a large oven-safe skillet over medium-high heat and add a little olive oil. Once hot, sear the beef fillet on all sides until browned, about 2-3 minutes per side.

8.Transfer the skillet to the preheated oven and roast the beef fillet for about 20-25 minutes for medium-rare, or until it reaches your desired doneness.

9.Remove the skillet from the oven and let the beef rest for 10 minutes before slicing.

10.Slice the beef fillet into thick medallions and serve with your choice of sides.
