Lettuce Wraps with Colorful Veggies and Zesty Pizza Sauce

1.Start by preparing the vegetables. Julienne the carrot and cucumber, and slice the yellow bell pepper into thin strips. Set aside.

2.In a skillet, heat the ghee over medium heat. Add the julienned carrot and sauté for about 2-3 minutes until slightly softened.

3.Add the cucumber and yellow bell pepper to the skillet. Sauté for an additional 2-3 minutes until all the vegetables are tender but still crisp. Season with salt and pepper to taste.

4.Remove the skillet from heat and squeeze the juice of one lemon over the sautéed vegetables. Toss to combine and let cool slightly.

5.While the vegetables are cooling, prepare the lettuce leaves. Carefully separate the leaves from the head of lettuce, keeping them whole for wrapping.

6.To assemble the wraps, take a lettuce leaf and spread a layer of cheese spread on it. Add a spoonful of the sautéed vegetable mixture on top of the cheese spread.

7.Drizzle a tablespoon of pizza sauce over the vegetables, then fold the sides of the lettuce leaf over the filling and roll it up tightly to form a wrap.

8.Repeat the process with the remaining lettuce leaves and filling ingredients until all are used up.

9.Serve the lettuce wraps immediately with extra pizza sauce on the side for dipping.
