Tuna Spaghetti Delight

1.Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente. Drain and set aside, reserving a cup of pasta water.

2.In a large skillet, heat a tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 3-4 minutes.

3.Add the sliced sausages to the skillet and cook until browned, about 5-6 minutes.

4.Stir in the drained tuna, red pepper flakes, and lemon juice, mixing well to combine. Cook for another 2-3 minutes until heated through.

5.In a small bowl, whisk the eggs and season with salt and pepper. Push the tuna and sausage mixture to one side of the skillet and pour the eggs into the other side. Scramble the eggs gently until just set, then mix everything together in the skillet.

6.Add the cooked spaghetti to the skillet, tossing to combine with the tuna and sausage mixture. If the pasta seems dry, add a little reserved pasta water to achieve the desired consistency.

7.Remove from heat and stir in the chopped parsley. Adjust seasoning with salt and pepper as needed.

8.Serve hot, garnished with additional parsley if desired.
