Spicy Chili Chicken Delight

1.Heat olive oil in a large skillet over medium heat.

2.Add the chopped onion and sauté until translucent, about 5 minutes.

3.Stir in the minced garlic and cook for an additional minute until fragrant.

4.Add the sliced red and green bell peppers to the skillet and cook for about 5 minutes until they start to soften.

5.In a separate bowl, mix together the chili powder, smoked paprika, cumin, oregano, cayenne pepper, salt, and black pepper.

6.Add the chicken thighs to the skillet and sprinkle the spice mixture over them, stirring to coat the chicken evenly.

7.Pour in the diced tomatoes, tomato paste, and chicken broth, stirring to combine all ingredients.

8.Bring the mixture to a simmer, then cover and reduce the heat to low. Let it cook for 25-30 minutes, or until the chicken is cooked through and tender.

9.Once cooked, remove the chicken from the skillet and shred it using two forks.

10.Return the shredded chicken to the skillet, add lime juice, and stir to combine everything well.

11.Cook for an additional 5 minutes to heat through and allow the flavors to meld together.
