Savory Herb-Crusted Beef Tenderloin

1.Preheat your oven to 400°F (200°C).

2.In a small bowl, mix together the Dijon mustard, minced garlic, olive oil, and balsamic vinegar until well combined.

3.Season the beef tenderloin steaks with salt and pepper on both sides.

4.Brush the mustard mixture generously over the top and sides of each steak.

5.In another bowl, combine the chopped parsley, thyme, rosemary, and breadcrumbs. Mix well to create the herb crust.

6.Press the herb mixture firmly onto the mustard-coated sides of the steaks, ensuring an even coating.

7.Heat a skillet over medium-high heat and add a little olive oil. Once hot, sear the steaks for about 2-3 minutes on each side until browned.

8.Transfer the seared steaks to a baking dish and place them in the preheated oven.

9.Roast in the oven for about 10-12 minutes for medium-rare, or until your desired doneness is reached.

10.Remove the steaks from the oven and let them rest for 5 minutes before serving.
