Bourbon Bliss Cookies

1.Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

2.In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.

3.In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.

4.Add the egg, bourbon, and vanilla extract to the butter mixture and mix until well combined.

5.Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.

6.Fold in the chocolate chips and chopped pecans (if using) until evenly distributed throughout the dough.

7.Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.

8.Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden but the centers are still soft.

9.Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
