Coconut, Prawn and Corn Chowder

1.Heat the oil in a large saucepan over medium heat.

2.Add the onion and cook until softened, about 3 minutes.

3.Add the garlic, potatoes, and corn and stir to coat.

4.Add the coconut milk, stock, cumin, coriander, salt, and pepper.

5.Bring to a boil.

6.Reduce heat and simmer until the potatoes are tender, about 15 minutes.

7.Add the prawns and simmer until pink and cooked through, about 3 minutes.

8.Ladle the soup into individual bowls.
