Spiced Chicken Parcels

1.Put the chicken pieces in a bowl.

2.Mix the marinade ingredients, pour over the chicken, and stir well to make sure each piece is coated.

3.Cover, refrigerate, and leave for two to three hours, or overnight if this is more convenient.

4.Take 12 good sized squares of foil, baking parchment or roasting bags cut to the right size.

5.Place a piece of chicken on each bit, and wrap carefully so that the juices will not leak out.

6.Place the parcels on a baking tray, and bake for 30 to 40 minutes at 200°C/400°F, gas mark 6.

7.Remove from the oven, allow to cool, and do not open the parcels until ready to eat.

8.If you can keep them in an ice pack, a delicious dark, clear jelly will form around the chicken.
