Festive Coconut Bibikkan Delight

1.In a large mixing bowl, combine the grated fresh coconut, rice flour, jaggery, and salt. Mix well until the jaggery is evenly distributed.

2.In a separate bowl, mix the thick coconut milk and water together. Gradually add this mixture to the dry ingredients, stirring continuously to form a smooth batter.

3.Add the cardamom powder, cinnamon powder, nutmeg powder, chopped cashews, and raisins to the batter. Mix until all ingredients are well incorporated.

4.Grease a square or rectangular baking dish with ghee. Pour the batter into the dish and spread it evenly.

5.Preheat your oven to 350°F (175°C). Bake the bibikkan for about 30-35 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.

6.Once baked, remove the bibikkan from the oven and let it cool in the dish for about 10 minutes. Then, carefully transfer it to a wire rack to cool completely.

7.Once cooled, cut the bibikkan into squares or diamond shapes and serve as a festive treat.
