Banana Oil Cake with Curd

1.Preheat your oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan or line it with parchment paper.

2.In a large mixing bowl, combine the mashed bananas, sugar, and vegetable oil. Mix until well combined and smooth.

3.Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and curd until fully incorporated.

4.In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.

5.Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix; a few lumps are okay.

6.Pour the batter into the prepared loaf pan, smoothing the top with a spatula.

7.Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.

8.Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
