Crispy Egg & Potato Chip Bites

1.In a mixing bowl, whisk the eggs until well beaten. Set aside.

2.In another bowl, combine the crushed potato chips, breadcrumbs, garlic powder, onion powder, paprika, cayenne pepper, salt, and black pepper. Mix well to combine.

3.Place the flour in a shallow dish and the buttermilk in another shallow dish.

4.Heat vegetable oil in a deep frying pan over medium heat until it reaches 350°F (175°C).

5.Take a small amount of the beaten egg (about a tablespoon) and dip it into the flour, coating it lightly.

6.Next, dip the floured egg into the buttermilk, allowing any excess to drip off.

7.Finally, roll the egg in the potato chip mixture, pressing gently to ensure it adheres well. Repeat this process for all the eggs.

8.Carefully place the coated egg bites into the hot oil, frying them in batches to avoid overcrowding. Fry for about 2-3 minutes on each side or until golden brown and crispy.

9.Once cooked, remove the egg bites from the oil and place them on a paper towel-lined plate to drain excess oil.

10.In a small bowl, mix together the mayonnaise, Dijon mustard, lemon juice, and hot sauce (if using) to create the dipping sauce. Adjust seasoning to taste.

11.Serve the crispy egg and potato chip bites hot, garnished with fresh parsley if desired, alongside the zesty dipping sauce.
