Spicy Chicken Biryani Delight

1.Rinse the basmati rice under cold water until the water runs clear. Soak it in water for 30 minutes, then drain.

2.In a large bowl, marinate the chicken pieces with yogurt, garlic, ginger, turmeric powder, red chili powder, coriander powder, and salt. Let it marinate for at least 1 hour, preferably overnight in the refrigerator.

3.Heat the cooking oil in a large pot over medium heat. Add the cumin seeds and whole spices (cloves, cardamom, cinnamon) and sauté until fragrant.

4.Add the sliced onions to the pot and cook until they are golden brown. Remove half of the onions and set aside for garnishing later.

5.Stir in the marinated chicken and cook until the chicken is browned and cooked through, about 10-15 minutes.

6.Add the chopped tomatoes, green chilies, cilantro, and mint leaves to the pot. Cook until the tomatoes are soft and the mixture is well combined, about 5 minutes.

7.In a separate pot, bring 4 cups of water to a boil. Add the soaked and drained basmati rice to the boiling water along with salt. Cook the rice until it is about 70% done, then drain the excess water.

8.Layer the partially cooked rice over the chicken mixture in the pot. Sprinkle garam masala on top and gently mix to combine without breaking the rice grains.

9.Cover the pot with a tight-fitting lid and cook on low heat for 20-25 minutes, allowing the flavors to meld and the rice to finish cooking.

10.Once done, remove from heat and let it sit for 10 minutes before fluffing the biryani with a fork. Serve hot, garnished with the reserved fried onions, cilantro, and mint.
