Garlic Spinach Chicken Skillet

1.Heat the olive oil in a large skillet over medium heat.

2.Season the chicken breasts with salt, pepper, oregano, and paprika on both sides.

3.Add the seasoned chicken breasts to the skillet and cook for about 6-7 minutes on each side, or until they are golden brown and cooked through. Remove the chicken from the skillet and set aside.

4.In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it.

5.Pour in the chicken stock and bring to a simmer, scraping up any browned bits from the bottom of the skillet.

6.Add the fresh spinach to the skillet and cook for 2-3 minutes, stirring occasionally, until the spinach is wilted.

7.Return the cooked chicken breasts to the skillet, nestling them into the spinach and garlic mixture. Cook for an additional 2 minutes to heat through.

8.Taste and adjust seasoning with more salt and pepper if needed before serving.
