Chewy Coconut Oatmeal Cookies

1.Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

2.In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.

3.Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.

4.In a separate bowl, whisk together the flour, salt, baking powder, and baking soda.

5.Gradually add the dry ingredients to the wet mixture, stirring until just combined.

6.Fold in the rolled oats and coconut flakes until evenly distributed throughout the dough.

7.Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, leaving space between each cookie to allow for spreading.

8.Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden and the centers are set but still soft.

9.Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
