Chewy Coconut Oatmeal Cookies

1Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

2In a large mixing bowl, cream together the softened butter, brown sugar (1 cup), and granulated sugar (½ cup) until light and fluffy.

3Add the eggs (2 large) one at a time, mixing well after each addition, then stir in the vanilla extract (1 teaspoon).

4In a separate bowl, whisk together the flour, salt (½ teaspoon), baking powder (1 teaspoon), and baking soda (½ teaspoon).

5Gradually add the dry ingredients to the wet mixture, stirring until just combined.

6Fold in the rolled oats (2 cups) and coconut flakes until evenly distributed throughout the dough.

7Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, leaving space between each cookie to allow for spreading.

8Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden and the centers are set but still soft.

9Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
