Savory Shakshuka Delight

1.Heat the olive oil in a large skillet over medium heat.

2.Add the diced onion and sauté for about 5 minutes until it becomes translucent.

3.Stir in the diced red and green bell peppers and cook for another 5 minutes until they soften.

4.Add the minced garlic, ground cumin, smoked paprika, and cayenne pepper, stirring for about 1 minute until fragrant.

5.Pour in the crushed tomatoes and add the sugar, salt, and pepper. Stir well to combine.

6.Bring the mixture to a simmer and let it cook for about 10-15 minutes, allowing the sauce to thicken slightly.

7.Using a spoon, create small wells in the sauce and crack an egg into each well.

8.Cover the skillet and cook for about 5-7 minutes, or until the egg whites are set but the yolks are still runny, or to your desired doneness.

9.Remove from heat and garnish with chopped parsley and crumbled feta cheese, if using.

10.Serve hot with crusty bread or pita for dipping.
