Crispy Bella Greens with Honey-Lemon Drizzle

1.Preheat your oven to 350°F (175°C) if you need to roast the nuts further.

2.In a mixing bowl, combine the lightly roasted cashews and almonds. If they are not roasted yet, spread them on a baking sheet and roast in the oven for about 10 minutes or until golden brown, stirring halfway through. Let them cool before adding to the salad.

3.In a large salad bowl, add the washed and dried Colorful Bella leaves, finely chopped carrots, and capsicum.

4.Chop the fresh mint leaves and add them to the salad bowl.

5.In a small bowl, whisk together the lemon juice, olive oil, honey, salt, and pepper until well combined to create the honey-lemon drizzle.

6.Pour the honey-lemon drizzle over the salad and toss gently to combine all the ingredients evenly.

7.Add the roasted nuts to the salad and give it a final toss to mix everything together without crushing the Bella leaves.

8.Serve immediately for the best texture and flavor.
