Mushroom Masala Delight

1.Heat the vegetable oil in a large pan over medium heat.

2.Add the cumin seeds and mustard seeds, and let them sizzle for a few seconds until fragrant.

3.Add the finely chopped onions and sauté until they turn golden brown.

4.Stir in the ginger-garlic paste and cook for another 2 minutes until the raw smell disappears.

5.Add the pureed tomatoes and cook until the oil starts to separate from the mixture, about 5-7 minutes.

6.Sprinkle in the turmeric powder, red chili powder, coriander powder, and salt. Mix well and cook for another 2 minutes.

7.Add the sliced mushrooms to the pan and stir to coat them in the spice mixture. Cook for about 5 minutes until the mushrooms are tender.

8.Pour in the coconut milk and bring the mixture to a gentle simmer. Let it cook for another 10 minutes, stirring occasionally.

9.Add the garam masala and mix well. Cook for an additional 2 minutes to allow the flavors to meld together.

10.Remove from heat and garnish with fresh cilantro before serving.
