Pan-Seared Mahi Mahi with Creamy Spinach Sauce

1.Heat olive oil in a large skillet over medium-high heat.

2.Season the mahi mahi fillets with salt and pepper on both sides.

3.Once the oil is hot, add the mahi mahi fillets to the skillet and sear for about 4-5 minutes on each side, or until golden brown and cooked through. Remove the fillets from the skillet and set aside.

4.In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.

5.Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes.

6.Pour in the heavy cream and bring to a gentle simmer, stirring occasionally.

7.Stir in the grated Parmesan cheese and lemon juice, mixing until the cheese is melted and the sauce is creamy. Season with salt and pepper to taste.

8.Return the mahi mahi fillets to the skillet, spooning the creamy spinach sauce over the top.

9.Cook for an additional 1-2 minutes to heat through before serving.
