Gond Pak Delight

1.Begin by heating a pan over medium heat and add the gond (edible gum). Roast it until it puffs up and turns golden brown. Remove from the pan and set aside to cool.

2.In the same pan, add ghee and let it melt. Once melted, add the whole wheat flour and roast it on low heat until it turns golden brown and emits a nutty aroma, stirring continuously to avoid burning.

3.Add the roasted gond back into the pan along with the mixed nuts. Stir well to combine all the ingredients.

4.Next, add the grated jaggery to the mixture and stir until it melts completely. If the mixture is too thick, add a little milk to loosen it up.

5.Sprinkle in the cardamom powder, nutmeg powder, and saffron strands (if using). Mix everything thoroughly until well combined.

6.Cook the mixture for an additional 5-7 minutes, stirring continuously until it thickens and starts to leave the sides of the pan.

7.Remove the pan from heat and let the mixture cool slightly. Once cool enough to handle, transfer it to a greased plate or tray and spread it evenly.

8.Allow the Gond Pak Delight to set for at least 30 minutes. Once set, cut it into desired shapes and serve.
