Spicy Kerala Chicken Delight

1.Heat the vegetable oil in a large pot over medium heat.

2.Add the mustard seeds and cumin seeds, and let them splutter for a few seconds.

3.Add the finely chopped onions and sauté until they turn golden brown.

4.Stir in the minced garlic, ginger, and slit green chilies, cooking for another 2 minutes until fragrant.

5.Add the chopped tomatoes and cook until they soften and break down, about 5 minutes.

6.Sprinkle in the turmeric powder, red chili powder, coriander powder, salt, and pepper, stirring well to combine.

7.Add the chicken pieces to the pot, stirring to coat them in the spice mixture. Cook for about 5-7 minutes until the chicken is browned on all sides.

8.Pour in the water, bring the mixture to a boil, then reduce the heat to low and cover the pot.

9.Let it simmer for 25-30 minutes, or until the chicken is cooked through and tender, stirring occasionally.

10.Once cooked, sprinkle the garam masala over the chicken and stir well to combine.

11.Garnish with fresh chopped cilantro before serving.
