Pineapple Upside-Down Cake

1.Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan thoroughly.

2.Pour the melted butter into the bottom of the prepared pan, spreading it evenly. Sprinkle the brown sugar over the butter.

3.Arrange pineapple slices in a single layer on top of the brown sugar. If desired, place a maraschino cherry in the center of each pineapple slice for a pop of color.

4.In a large mixing bowl, combine flour, granulated sugar, baking powder, and salt. Add the softened butter, milk, eggs, and vanilla extract to the dry ingredients. Beat on medium speed until the batter is smooth and fully combined (about 2 minutes).

5.Pour the cake batter over the arranged pineapples in the pan. Spread it evenly. Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean.

6.Let the cake cool in the pan for 10 minutes. Run a knife around the edges to loosen the cake. Place a serving plate upside down over the cake pan. Carefully flip the plate and pan together to release the cake.

7.Serve the cake warm or at room temperature. The caramelized pineapple topping is the star of the show!
