Cheesy Koththu Delight

1.Heat the vegetable oil in a large skillet or wok over medium heat.

2.Add the chopped onion, green chilies, garlic, and ginger to the skillet. Sauté until the onion becomes translucent and fragrant, about 3-4 minutes.

3.Stir in the mixed vegetables and cook for another 5 minutes until they are tender.

4.Add the curry powder, chili powder, salt, and black pepper to the skillet. Mix well to combine the spices with the vegetables.

5.Add the shredded roti to the skillet, stirring to combine with the vegetable mixture. Cook for about 2-3 minutes, allowing the roti to absorb the flavors.

6.Pour the soy sauce over the roti mixture and stir well to ensure even distribution.

7.Sprinkle the shredded mozzarella cheese over the top of the koththu. Cover the skillet with a lid and let it cook for another 2-3 minutes, or until the cheese is melted and bubbly.

8.Remove the lid and give the koththu a good stir to mix the melted cheese throughout.

9.Garnish with fresh chopped cilantro before serving.
