Cheesy Potato Puffs

1.Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

2.In a large mixing bowl, combine the mashed potatoes, shredded cheddar cheese, grated Parmesan cheese, chopped green onions, garlic powder, onion powder, paprika, black pepper, and salt. Mix until well combined.

3.Add the egg to the potato mixture and stir until fully incorporated, creating a cohesive mixture.

4.Using your hands, scoop out a small amount of the mixture and form it into a ball or puff shape, about the size of a golf ball. Repeat until all the mixture is shaped into puffs.

5.Roll each potato puff in breadcrumbs until fully coated, then place them on the prepared baking sheet.

6.Lightly spray the tops of the potato puffs with cooking spray to help them crisp up in the oven.

7.Bake in the preheated oven for 20-25 minutes, or until the puffs are golden brown and crispy on the outside.
