Sauerkrautstrudel

1.Prepare the strudel dough as described and let it rise in a warm bowl for 60 minutes.

2.Meanwhile, peel the onions and garlic. Clean the bell peppers and cut them into small cubes. Sauté the vegetables in hot olive oil.

3.Coarsely grate the sheep's cheese. Mix and season the sauerkraut with the paprika-onion mixture.

4.Preheat the oven to 190°C. Dust a large kitchen towel with flour. Roll out the dough on it to about 50 x 60 cm. Brush the dough with some melted butter, spread the filling and sheep's cheese on it, and roll up the dough from the narrow side using the towel.

5.Place the strudel on a baking sheet lined with parchment paper, brush with the remaining butter, and bake for 45 to 50 minutes.
