Spicy Chicken Biryani Delight

1.Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain and set aside.

2.In a large pot, heat the ghee or oil over medium heat. Add the cumin seeds and let them splutter.

3.Add the sliced onions and sauté until they turn golden brown.

4.Stir in the ginger-garlic paste and green chilies, cooking for another 2 minutes until fragrant.

5.Add the chicken pieces to the pot and cook until they are browned on all sides, about 5-7 minutes.

6.Mix in the chopped tomatoes, coriander powder, turmeric powder, red chili powder, and salt. Cook until the tomatoes soften, about 5 minutes.

7.Stir in the yogurt, garam masala, chopped cilantro, and mint leaves. Cook for another 5 minutes, allowing the spices to meld with the chicken.

8.Add the soaked and drained rice to the pot, gently mixing it with the chicken and spices.

9.Pour in 4 cups of water and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot with a tight-fitting lid, and let it simmer for 20 minutes or until the rice is fully cooked and has absorbed the water.

10.Once cooked, remove the pot from heat and let it sit, covered, for another 10 minutes to allow the flavors to develop further.

11.Fluff the biryani with a fork before serving, garnishing with additional cilantro and mint if desired.
