Savory Potato and Onion Fritters

1.Peel and grate the potatoes into a large mixing bowl. Squeeze out any excess moisture using a clean kitchen towel or cheesecloth.

2.Add the finely chopped onion to the bowl with the grated potatoes.

3.In a separate bowl, combine the all-purpose flour, baking powder, paprika, cumin, chili powder, salt, and pepper. Mix well to combine the dry ingredients.

4.Gradually add the dry mixture to the potato and onion mixture, stirring to combine.

5.Add the chopped cilantro and enough water to form a thick batter. The batter should be thick enough to hold its shape but not too dry. Adjust the water as needed.

6.Heat oil in a deep frying pan over medium heat. To test if the oil is hot enough, drop a small amount of batter into the oil; it should sizzle and float to the surface.

7.Using a spoon or your hands, drop spoonfuls of the batter into the hot oil, flattening them slightly to form fritters. Do not overcrowd the pan; fry in batches if necessary.

8.Fry the fritters for about 3-4 minutes on each side or until they are golden brown and crispy.

9.Once cooked, remove the fritters from the oil and place them on a paper towel-lined plate to drain excess oil.

10.Serve hot, garnished with diced tomatoes and additional cilantro if desired.
