Garlic Chicken Potato Skillet

1.Heat the olive oil in a large skillet over medium heat.

2.Add the diced potatoes to the skillet and season with salt, pepper, and paprika. Cook for about 10-12 minutes, stirring occasionally, until the potatoes are golden and crispy.

3.Add the sliced onions to the skillet and cook for an additional 5 minutes until they become translucent and start to caramelize.

4.Stir in the minced garlic and cook for about 1 minute until fragrant.

5.Add the shredded chicken and diced tomato to the skillet. Mix everything together and cook for another 5 minutes until heated through.

6.Sprinkle dried oregano over the mixture and adjust seasoning with salt and pepper as needed.

7.Remove from heat and garnish with fresh parsley before serving.
