Spicy Tomato Rice Delight

1.Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes and drain.

2.In a large pot, melt the butter over medium heat. Add the chopped onions and sauté until they turn translucent, about 5 minutes.

3.Stir in the ginger & garlic paste and cook for another 2 minutes until fragrant.

4.Add the diced tomatoes to the pot and cook until they soften and break down, about 5-7 minutes.

5.Mix in the chilli sauce, dried oregano, salt, black pepper, and red chili powder (if using). Cook for an additional 2 minutes to combine the flavors.

6.Add the soaked and drained rice to the pot, stirring gently to coat the rice with the tomato mixture.

7.Pour in the 4 cups of water and bring to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 15-20 minutes until the rice is cooked and water is absorbed.

8.Remove the pot from heat and let it sit covered for another 5 minutes to allow the rice to steam.

9.Fluff the rice with a fork and garnish with fresh coriander leaves before serving.
