Pandan and Lime Cooler

1.In a large pot, combine the chopped pandan leaves and water. Bring to a boil over medium heat.

2.Once boiling, reduce the heat and let it simmer for about 15-20 minutes to extract the flavor and color from the pandan leaves.

3.Remove the pot from heat and strain the liquid through a fine mesh sieve or cheesecloth into a large pitcher, discarding the solid pandan leaves.

4.Add the fresh lime juice and sugar to the pandan infusion, stirring well until the sugar is completely dissolved. Taste and adjust sweetness if necessary.

5.Let the mixture cool to room temperature, then refrigerate until chilled.

6.To serve, fill glasses with ice cubes, pour the chilled pandan and lime mixture over the ice, and garnish with lime slices and fresh pandan leaves.
