Ghee-Roasted Coconut Breadcrumb Cookies

1.Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

2.In a large mixing bowl, combine the breadcrumbs, coconut powder, sugar, baking powder, and salt. Mix well until all dry ingredients are evenly distributed.

3.In a small saucepan, melt the ghee over low heat until it is completely liquid. Remove from heat and stir in the vanilla extract.

4.Pour the melted ghee into the dry ingredients and mix until everything is well combined and forms a dough-like consistency.

5.Using your hands, shape the dough into small balls, about 1 inch in diameter, and place them on the prepared baking sheet, leaving some space between each cookie.

6.Flatten each ball slightly with the palm of your hand and sprinkle a little shredded coconut on top of each cookie for added texture and flavor.

7.Bake in the preheated oven for 12-15 minutes, or until the edges are golden brown and the tops are lightly toasted.

8.Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
