Lime Chicken Lettuce Wraps with Cherry Tomatoes

1.In a large skillet, heat the olive oil over medium heat.

2.Add the diced chicken breast to the skillet and season with salt and pepper. Cook until the chicken is browned and cooked through, about 5-7 minutes.

3.Pour in the chicken broth and bring to a simmer. Allow it to cook for another 5 minutes until the broth reduces slightly.

4.Stir in the heavy cream and lime juice, mixing well. Let it simmer for an additional 3-4 minutes until the sauce thickens slightly.

5.Add the diced green bell pepper and halved cherry tomatoes to the skillet. Cook for another 2-3 minutes until the vegetables are tender but still vibrant.

6.Remove the skillet from heat and stir in the chopped cilantro.

7.To serve, take a lettuce leaf and spoon a generous amount of the lime chicken mixture into the center. Wrap the lettuce around the filling and enjoy!
